Dry Ingredients
1 1/2 Cups Self Rising Flour
3/4 tsp Baking Powder
3/4 tsp Baking Soda
Pinch of Salt
4 tbs of Coco
5 tbs Brown Sugar
1 Cup Chopped Walnuts
Wet Ingredients
6 tbs Water
5 tbs Apple Sauce
6 tbs Maple Syrup
1 tsp Vanilla Essence
2 Medium to Large Mashed Bananas
Preheat oven to 180 or 160 fan forced
Combine all dry ingredients in a bowl except the Walnuts, be sure to siff everything. In A separate bowl combine all wet ingredients mix well. Mix together both wet and dry, I tend to use a electric mixer as I think it makes a fluffier muffin and then pop in the walnuts and stir.
Spoon into muffin tin lined with patty pans or use silicone muffin tray, should make around 12 muffins, Bake for 20-25 minutes or until a skewer comes out clean.

I really want to bake these right now (and of course, test one for quality control!) Shame there's no hope of getting near an oven til the end of the month- damn you India!!!
