Very Berry Muffins


Very Berry Muffins

1 1/2 Cups White Self Rising Flour
3/4 tsp Baking Powder
3/4 tsp Baking Soda
Pinch of Salt
1 Medium Banana Mashed
4 1/2 tbs Apple Sauce
6 tbs Maple Syrup
6 tbs Water
1 tsp Vanilla Essence
1 Cup Frozen Mixed Berries *

Preheat oven to 180 or 160 fan forced

Combine dry ingredients, be sure to siff make a well then in another bowl combine all wet ingredients except berries, pour wet ingredients into dry ingredients and mix well, gently stir in berries.

Spoon into a muffin tray lined with patty pans or into a silicone tray cook for 20-25 minutes or until muffins are browned and well risen

* you may use any berries, I just find if they are frozen they don't stain the muffin and the berries stay together

Dry Ingredients

1 1/2 Cups Self Rising Flour
3/4 tsp Baking Powder
3/4 tsp Baking Soda
Pinch of Salt
4 tbs of Coco
5 tbs Brown Sugar
1 Cup Chopped Walnuts

Wet Ingredients

6 tbs Water
5 tbs Apple Sauce
6 tbs Maple Syrup
1 tsp Vanilla Essence
2 Medium to Large Mashed Bananas

Preheat oven to 180 or 160 fan forced

Combine all dry ingredients in a bowl except the Walnuts, be sure to siff everything. In A separate bowl combine all wet ingredients mix well. Mix together both wet and dry, I tend to use a electric mixer as I think it makes a fluffier muffin and then pop in the walnuts and stir.

Spoon into muffin tin lined with patty pans or use silicone muffin tray, should make around 12 muffins, Bake for 20-25 minutes or until a skewer comes out clean.
