I'm Back

Hi All, I'm back after several months of being a slacker and trying different diets, I now know for sure that RAW Raw RAW Raw is the way to go. So I'm ready for finding, inventing and best of all eating. I'm also proud to say I haven't relapsed for 2 years and 3mths so all this healthy eating is definitely working, but I will say since being a bit slack on 100% Raw foods I have had colds, asthma, pimples, thrush, skin irritations not to mention the 4 kilos of weight I've put on, so if you have been a little lazy like me lets get stuck into it together and this time it's for life.

Raw Blueberry Cheese Cake

OMG this is such a yummy fake cheese cake,  Definitely the best cheese cake I've ever had I have to stop myself from eating so much.  It is actually still high in ssaturated fats because of the use of coconut oil, maybe next time I'll try using a little less oil or maybe even olive instead because I know Dr Jelenik disagrees with the use of coconut but hey I figure I eat Raw now so very very little saturated fats pass my lips I still keep well under the 15g recommendations. This is going to be my Christmas dessert but I will go for raspberries to fit in with the Christmas colour theme (I like things to match hehehehe).


CRUST
1 Cups Raw Macadamia Nuts
1 Cup Raw Almonds
1 Cup Pitted Fresh Dates
1/4 Cup Desiccated Coconut

FILLING
3 Cups Raw Cashews (soaked for 2 hrs)
3/4 Cup Freshly Squeezed Lemon Juice
1/2 -3/4 Cup Agave Syrup
1/2 Teaspoon Sea Salt
1 Teaspoon Natural Vanilla Essence
3/4 Cup Coconut Oil

TOPPING
250g Frozen Blueberries
1/2 Cup Fresh Pitted Dates

BASE METHOD
Blend nuts and dates in food processor. Spread dried coconut over the bottom of base. Press nut mixture onto the coconut, this not only tastes great but stops the mixture sticking.

FILLING METHOD
Blend cashews, lemon juice, agave, coconut oil, and 1/2 cup water  until all ingredients come together into a smooth cheese like consistency. With the help of a spatula pour cheese mixture onto base. After the filling has been added be sure to give the dish a few gentle taps to remove any air bubbles.

TOPPING METHOD
Process thawed berries and dates until well blended, pour on top of cake. Place cake in Freezer until frozen, thaw 15-20 mins before serving.

ENJOYthis seriously is one fantastic cheesecake

Raw Avocado Lime Pie

So I've been having abit of a raw pudding frenzy lately and am just so excited to be creating and finding so many yummy recipes especially since chrimbo is just round the corner. Yay I no longer have to sit and watch while my family chow into all the yummy puds and drool as they do, so I hope you enjoy my next creation which is based on a recipe from a Perth lady known as Raw Food Karen, her book Raw Food Reawakening is brilliant and has some super easy recipes if your a new rawfoodist like myself Enjoy xx


I used the same crust as I did for the Chocolate Mousse Pie because it's really good and not to expensive.

CRUST
2 Cups Raw Almonds
1 Cup Pitted Fresh Dates
1/4 Teaspoon Sea Salt

FILLING
4 Avocados
1/2 - 3/4 Cup Fresh Lime Juice
1/2 Cup Agave Nectar
1 Cup Dessicated Coconut

METHOD
Process crust ingredients until smooth, press into pie dish. I also wiped my dish with EVOO to stop it sticking.

Blend filling until smooth and spoon over pie crust. Set in fridge. Can be Frozen.

Raw Chocolate Mousse Pie



Raw Pie Crust

2 Cups Almonds
1 Cup Fresh Dates (pitted)
1/4 Teaspoon Salt

In a food processor blend the almonds to a course meal, then add the dates and salt combine really well.
Press into a flan dish that has been sprayed with EVOO.

Raw Mousse Filling

3 Ripe Avocados
1 1/2 Tablespoons EVOO
1 Tablespoon Natural Vanilla Extract
4 1/2 Tablespoons Raw Coco Powder
1/2 Cup Maple Syrup
Stevia to taste

Blend Avocados till smooth, then add EVOO, Maple Syrup, Stevia and Vanilla once well combined add Coco and blend it should now resemble a beautiful chocolaty mousse Yum.

Spoon mousse into flan dish and spread evenly. Place your choice of fruit on top.
This pie should also freeze well as did the cupcakes.

RAW Mini Chocolate Cupcakes with Avocado Icing

Well as I've been delving into the world of raw foods and my god it really is another world, I'm still trying to get my head round gluten free,dairy free, legume free, any how thought I'd start my journey with something sweet and easy. These cupcakes are great to freeze and just take one out when you have a sweet craving.


1 1/2 Cups Walnuts
1 Cup Dates
3 Tablespoons Coco
1 Teaspoon Natural Vanilla Extract
1/2 Teaspoon Almond Essence
1/2 Tablespoon EVOO
Stevia to taste (optional) I didn't use any as the icing is sweet enough

Place everything into your food processor and blend until smooth.

Roll into small balls and place into mini cupcake patty pans shape into muffin shapes.

Icing

this icing really varies to how big the avocado is and how strong you like your chocolate so it's all about taste
I used

1 Avocado
1 1/2 Tablespoons Coco
1 Teaspoon EVOO
Natural Maple Syrup to taste

Again blend all in food processor and then ice each little cupcake, they would look lovely decorated with a raspberry or halved strawberries.

Well I've heard of Chia seeds and I use them in my breads I make, but I didn't realise actually how good they are for you. My mum bought round a leaflet on them Yesterday and Wow, they really are a SUPER FOOD.

Wow, what a great super food I have just started having 1 tablespoon sprinkled over my cereal in the morning.

Beetroot Coleslaw

This is another really easy salad that tastes great, I'm really trying to eat raw as possible and salads are a great way to do it.

2 Medium Beetroots
3-4 Carrots
3 Celery Stalks
1/4 Cup Sultanas
1/4 Cup EVOO
2 Crushed Garlic Cloves
2 Tablespoons Balsamic Vinegar
1 Tablespoon Freshly Squeezed Lemon

Grate Beets and Carrots, Chop Celery in to pieces and mix together with sultanas.

In a Separate bowl mix EVOO, Crushed Garlic, Vinegar and Lemon Juice.

Pour over salad and combine well.

I accompanied mine with a piece of mackerel (fish) Yum.
