Raw Chocolate Mousse Pie



Raw Pie Crust

2 Cups Almonds
1 Cup Fresh Dates (pitted)
1/4 Teaspoon Salt

In a food processor blend the almonds to a course meal, then add the dates and salt combine really well.
Press into a flan dish that has been sprayed with EVOO.

Raw Mousse Filling

3 Ripe Avocados
1 1/2 Tablespoons EVOO
1 Tablespoon Natural Vanilla Extract
4 1/2 Tablespoons Raw Coco Powder
1/2 Cup Maple Syrup
Stevia to taste

Blend Avocados till smooth, then add EVOO, Maple Syrup, Stevia and Vanilla once well combined add Coco and blend it should now resemble a beautiful chocolaty mousse Yum.

Spoon mousse into flan dish and spread evenly. Place your choice of fruit on top.
This pie should also freeze well as did the cupcakes.

RAW Mini Chocolate Cupcakes with Avocado Icing

Well as I've been delving into the world of raw foods and my god it really is another world, I'm still trying to get my head round gluten free,dairy free, legume free, any how thought I'd start my journey with something sweet and easy. These cupcakes are great to freeze and just take one out when you have a sweet craving.


1 1/2 Cups Walnuts
1 Cup Dates
3 Tablespoons Coco
1 Teaspoon Natural Vanilla Extract
1/2 Teaspoon Almond Essence
1/2 Tablespoon EVOO
Stevia to taste (optional) I didn't use any as the icing is sweet enough

Place everything into your food processor and blend until smooth.

Roll into small balls and place into mini cupcake patty pans shape into muffin shapes.

Icing

this icing really varies to how big the avocado is and how strong you like your chocolate so it's all about taste
I used

1 Avocado
1 1/2 Tablespoons Coco
1 Teaspoon EVOO
Natural Maple Syrup to taste

Again blend all in food processor and then ice each little cupcake, they would look lovely decorated with a raspberry or halved strawberries.

Well I've heard of Chia seeds and I use them in my breads I make, but I didn't realise actually how good they are for you. My mum bought round a leaflet on them Yesterday and Wow, they really are a SUPER FOOD.

Wow, what a great super food I have just started having 1 tablespoon sprinkled over my cereal in the morning.

Beetroot Coleslaw

This is another really easy salad that tastes great, I'm really trying to eat raw as possible and salads are a great way to do it.

2 Medium Beetroots
3-4 Carrots
3 Celery Stalks
1/4 Cup Sultanas
1/4 Cup EVOO
2 Crushed Garlic Cloves
2 Tablespoons Balsamic Vinegar
1 Tablespoon Freshly Squeezed Lemon

Grate Beets and Carrots, Chop Celery in to pieces and mix together with sultanas.

In a Separate bowl mix EVOO, Crushed Garlic, Vinegar and Lemon Juice.

Pour over salad and combine well.

I accompanied mine with a piece of mackerel (fish) Yum.

Vegan Soft Cheese

So since I've been on this diet, I've been mainly missing Cheese and Chocolate so thought I'd come up with a vegan cheese spread which is actually quite tasty, so give it a try.

1 Cup Organic Tahini
2 Tablespoons EVOO
2 Tablespoons Rice Wine Vinegar
1/4 Cup Chopped Fresh Garlic Chives
1 Tablespoon Mixed Herbs
1 Tablespoon Pro Biotic Yeast
Salt and Pepper to Taste

Mix all ingredients together in a bowl and spoon into a jar with some kind of lid so before you use it you can give it a shake so all the oil that sits on top can be mixed together again.

Keep in the fridge, and just remember that although this is really healthy it does still contain saturated fats so go easy.

Mums Truly Amazing Rice Salad

I can honestly say, with hand on heart that this is my absolute favorite salad I could eat it for Breakfast, Lunch, Dinner and still go back for seconds it's a definite must try and I promise you will not be disappointed.

Rice Mixture

2 Cups Brown Rice
1 Red Pepper (capsicum)
1 Green Pepper (capsicum)
1 Tin Sweet Corn
4 Stalks Spring Onions
1 Cup Cashews
1/2 Cup Sunflower Seeds
1 Cup Currants

Dressing

1/2 Cup EVOO
2 Tablespoons Soy Sauce
2 - 3 Cloves Garlic Crushed
1 Juice of Lemon

Cook rice following directions on packet

Dice peppers and spring onions in to small cashew slice bits

Mix all the rice mixture together, except cashews these go soggy so mix in just before serving

In a separate bowl mix the dressing together and then pour over over rice mixture, mixing well so all ingredients are well coated.

If your on the MS Recovery diet or Best Bet Diet you could substitute the soy sauce for balsamic vinegar and the corn for a yellow pepper to give the salad that lovely bright yellow colour, also sometimes I have a problem finding natural currants so I use natural sultana's to give that little sweetness.

Nothing to be Ashamed of

I was DX in Jan 2008 after a very stressful, anxious year of being a new mum and I self DX myself after seeing a lady with MS who was completely bed ridden. I read up on her disease and symptoms as my mum was going to be her carer, I knew as soon as I saw her profile that this is exactly what I had, but as my son was only 5 weeks old all the docs kept saying it was post natal depession. One whole year it took me to confince my doctor to let me go for a MRI that was in the Jan 08, we were moving to Perth, Australia in
March so all was very stressful.

Blow me down the MRI came back and yes I had MS, a bit of a shock but, I was so grateful that I finally new what was wrong with me, as I have read a million times with MS sufferers.
I was so embarrassed and ashamed to have this horrible disease, for so long I kept it a secret. I dwelled in my own pity for so long thinking my life is over, whats the point of life I'm only going to end up in a wheelchair or having someone have to help me when I go to the toilet, I thought my life was ended.

My life is far from over and I'm not going to let this horribly labeled disease let anyone or anything stop me from having the life I wanted, If anything having MS has made me a better mum,wife,daughter and sister then I could only wish for, there is such a stigma on MS, I'm young healthy, active and have no plans of changing that. I really think people need to be educated on the fact that MS isn't always bad, I  have been on the Jelinek diet for four weeks and my right leg is normally numb at least every other day and I have not felt it once, all I have to do now is recover my feet and right hand, bring it on.

I no longer feel ashamed  of this disease and no way is my life is over and I want to scream to the world "I'm Fine and I will live a life no different to yours " I was abit iffy about the whole diet thing but hello, our body is like a car we give our cars fuel to work so why can't people see we need the best food to keep our bodies healthy, I will tell anyone now,I'm not embarrassed I have a condition but that's it I'm fine and will always be.......................

Date and Walnut Coleslaw


This Salad was a  through together with things I had in the fridge and cupboard, we had it dinner last night to accompany my fish and my husbands grilled pork chops but I must say we were pleasently surprised so I'll deffinately be making this one again. Great for the BBQ season thats just round the corner.

serves - 4 - 6 side dishes

1/4 Cabbage
3 Medium Carrots
3 Celery Stalks
1/2 Cup Chopped Pitted Dates
1/2 - 1/4 Cup Chopped Walnuts

2 TableSpoons EVOO
1/4 Cup Balsamic 100% FatFree Dressing (I used Praise)

Slice Cabbage into thin strips, Grate Carrots, Chop Celery. Mix together with Dates and Walnuts

Pour EVOO and Balsamic Dressing over and stir through salad.

This salad is much nicer when eaten straight away becauase the next day its not as crispy and a little soggy.

home made rice milk

Well as I'm now not eating Legumes, I no longer can enjoy soy milk which is abit of a bummer because I don't think many cafes will be in supply of rice milk so I'm no longer going to be able to enjoy a chat and a latte with my girlfriends looks like it's going to herbal tea instead.

This is a recipe for making rice milk I got it from my nutritionist, at least I know whats going in it no yukky preservatives or flavourings.

It's super easy

4 cups of Hot Water
1 cup cooked rice white or brown
1 teaspoon of natural vanilla extract

Blend all ingredients together until smooth. Place milk into the fridge to let cool and the milk will separate.Pour the milk through a strainer to catch any rice particles. Keep in the fridge until ready to use.

this isn't quite like the shop bought milk so you could add stevia or agave nector if you want somthing a little sweeter.

Done, how easy is that.

Gluten Free, Dairy Free, Egg Free and Legume Free Bread

I had my first appointment with a nutritionist / iradologist last Saturday and it was really interesting she said I was taking all the right supplements except one which is Lecithin she advised me to start taking that and I'm also low in magnesium so she gave me a horrible liquid to take morning and night and also a tablet called metagest which helps with the digestion of portein in my stomach.

She was really happy with the way I was eating but advised me to eat as raw as possible, not sure about that one yet I don't mind eating all my veg and fruit raw but when it comes to not having bread ,pasta, rice, please I need some sort of enjoyment in my live so I think I need to just get my head around this diet first.

Well as I'm well and truly following the MS Recovery Diet, No Dairy,No Gluten, No Legumes,No Sat Fat, No Eggs and minimal Yeast.  I was desperate to come up with a bread I could enjoy so this was my first attempt and it actually was quite nice so give it a try.

Dry Ingredients

1 Cup Rice Flour
1 Cup Buckwheat Flour
1/2 Cup Millet Flour
1/2 Cup Tapioca Flour
2 1/2 Teaspoons Guar Gum
1 Tablespoon Probiotic Yeast (especially designed for people with yeast intolerance)

Wet Ingredients

2 Tablespoons Honey
2 Tablespoons EVOO
1 1/2 - 2 Cups Water
1 Teaspoon Cider Vinegar

I also Added 2 Tablespoons Chai Seeds and 1/4 Cup Mixed seeds but this is optional and you may need to add a tad more water.

First spray your bread maker bread tin with EVOO spray

Pour all the wet ingredients in

Mix all dry ingredients together even seeds if using in a separate bowl

Turn your bread maker on, basic loaf cycle and while it's mixing carefully spoon in dry ingredients, making sure to scrape the sides of the tin so all flour get wet.

Once the mixture is a toothpaste like consistency you can leave it to continue.

I love bread makers and would advise anyone with a gluten free diet to get one, they are well worth it, and it will save you loads have a look on ebay.

really bad blogger, but will get better promise

Hi all, am really sorry that I haven't been around for soooooooooooo long but I think i've got my mojo back or is it my child free house and the glass of crisp cold white wine no don't think so have been dying to get back in the kitchen and I have two new machines to work with a brilliant $30 cash converters find Bread Maker (i love it) and my great detoxing Juicer which is great too.

 I've been really confused lately about my diet when it comes to what and what not to eat to keep my ms at bay, and as my sister says "your obsessed, and stop reading all these books" but it's really hard when your've been delt the cards of ms it's the unknown that gets me, I can't even keep a suprise for my kids let alone not knowing my fate for the future.

But on better much more positive notes i'm now Gluten Free and will soon be Legume Free to, Just need to get my head round  the no Gluten Deal, tell you what though i'm really enjoying it so far as much as i'm enjoying a childfree house, Hahahah (just jokes) and all of this healthy eating will lead to STOP of Disease and then RECOVERY so join me through that journey, can't wait.

I would also like to welcome one special new follower to my blog, not sure how they found out about it but I will say this person, even though I haven't seen them for so long means alot to me so thank you BUZZ ( i hope it's my buzz and not someone else) your support means alot to me xx

I hope to be back on board very soon and I even though i'm going towards the ms recovery diet, I will still follow Dr Jeliniks diet too, well what can I say he's from perth and he's a doctor so hey he must know his stuff.
